Dough Ingredients

  • 5 ½ cups sifted all-purpose flour
  • 1 packet of instant active yeast
  • ¼ cup white sugar
  • ½ cup vegan butter alternative, melted and cooled to room temp
  • 2 cups room temperature nut milk

Filling Ingredients

  • 1 cup vegan butter alternative, unsalted
  • 1 cup brown sugar
  • 3 tbsp ground cinnamon
  • 1 tsp vanilla extract

Icing Ingredients

  • 1 cup powdered sugar
  • 2 tbsp almond milk
  • 1 tsp vanilla
  • Pinch of salt

How To Make

  • In a large bowl with a lid, mix together the dough ingredients as follows: nut milk, butter alternative, and sugar. Combine the three ingredients until fully mixed.
  • Sprinkle in the yeast packet and let the mixture sit for a few minutes to activate. This will ensure you get a good, light texture to the rolls.
  • Add the flour and mix well until just combined. Be careful not to over-mix, as this can result in a tough dough
  • Place the lid on the bowl and let sit for an hour to rise.
  • Preheat your oven to 350 degrees Fahrenheit
  • Remove the dough from the bowl and knead it a bit. Dust it with flour and continue to work with it until it is not sticky. Repeat the dusting and kneading until it is a rollable texture
  • Roll the dough out into a ½ inch thick layer.
  • In another bowl, mix together the filling ingredients until well combined
  • Spread the filling evenly over the rolled out dough.
  • Roll up the dough into a log, being careful to be neat and create a tight roll without squishing out any of the filling or overly compressing the dough
  • Cut the log into around fourteen pieces
  • Divide the pieces between two well greased round pans
  • Set aside and let rest for around an hour while covered in plastic wrap or a towel
  • Remove the towel or plastic wrap
  • Place into the preheated oven and bake for around thirty minutes or until brown and crisp on top
  • In another bowl, combine the icing ingredients until a smooth, silky texture forms
  • Remove the pan from the oven and coat evenly with the icing mixture

2. Vegan Blueberry Muffins
